Cauliflower Tater-tot Casserole

  • 1 lb ground beef or pork
  • 1 onion
  • 2 cloves of garlic, minced
  • 2 cups milk
  • 2 Tbsp cornstarch
  • 2 tsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 cups cheddar cheese
  • 2 cups riced cauliflower


  1. Begin by cooking your cauliflower rice. ( This is if you make your own. You can just buy frozen riced cauliflower and skip this step.)
  2. Preheat oven to 350F and grease 9 inch baking dish.
  3. Sauté the ground beef, onion, garlic until fully cooked in a skillet.
  4. In a bowl whisk together milk and cornstarch.
  5. Add cornstarch and milk mixture to ground beef. Stir continuously for 5-10 min or until thick.
  6. Add in Worcestershire sauce, salt and pepper and then transfer to baking dish.
  7. Top with 1 cup of the shredded cheddar, followed by the drained cauliflower, more salt and pepper, and finally the remaining cheese. 
  8. Bake for 35-40 minutes, until the cauliflower starts to brown and the cheese on top is melted.


To make the recipe even easier you can definitely just sub the milk, cornstarch and seasonings for 2 cups of cream of mushroom or chicken soup! I just never have that on hand and like to live with less stuff that I can make myself!

I also did use parmesan cheese the last time and tasted just as good so whatever you have on hand will work!
