Cauliflower Tater-tot Casserole
This is everything comfort, warm! Enjoy this healthy spin to a classic casserole that doesn't sacrifice taste or warmth! Filled with pastured pork raised in Minnesota.

Ingredients

  • (1 lb.) Pork Breakfast Sausage
  • (1) Onion
  • (2 Tbsp) Minced Garlic
  • (2 cups) Plant based milk
  • (2 Tbsp) Arrowroot powder or cornstarch
  • (2 tsp) Worcestershire sauce
  • (1 tsp) Salt
  • (1/2 tsp) Black Pepper
  • (2 cups) Riced Cauliflower

Directions

  1. Begin by cooking your cauliflower rice. ( This is if you make your own. You can just buy frozen riced cauliflower and skip this step.)
  2. Preheat oven to 350F and grease 9 inch baking dish.
  3. Sauté the ground beef, onion, garlic until fully cooked in a skillet.
  4. In a bowl whisk together milk and cornstarch.
  5. Add cornstarch and milk mixture to ground beef. Stir continuously for 5-10 min or until thick.
  6. Add in Worcestershire sauce, salt and pepper and then transfer to baking dish.
  7. Top with 1 cup of the shredded cheddar, followed by the drained cauliflower, more salt and pepper, and finally the remaining cheese. 
  8. Bake for 35-40 minutes, until the cauliflower starts to brown and the cheese on top is melted.
